Mead?

Have you made Mead?

I've had a Mead recipe book for a number of years now.

I now have 25lts fermenting in the home brew kit.

Going by the recipe book I have to rack it a few times before bottling it.

The recipe book states 1-3 years to mature.

Aside from drinking the mead during games, I was going to make a nice label and give them away the mead as Christmas presents this year.

How long did you wait?

i have never made mead but i used to make and win prizes for home made wine and champers id advise you to leave it as long as poss 2 years at lest

It is still bubbling away.

Beer normally stops fermenting within the week.

I have a 1971 Woman's Day recipe for Ginger beer.

My sister asked me to make it for her Birthday (1st June) as a childhood memory.

So I made ginger beer on Sunday as well as Lemonade.

Both will go into the refridgerator by Thursday to stop the gas from building up.

I racked the mead last night.

The recipe I have suggests for a semi sweet mead, not to wait for the full fermentation but to rack it when the fermentation slows down and top it up with a mixture of 2.5lt of water and about 500gm of honey.

The extra honey has given the fermentation a new lease of life.

The idea is that the yeast will die off once it has reached its maximum alcohol tolerance level leaving some unprocessed sugars from the honey to keep the mead sweet.

Just an update, It is still bubbling away.

(It is alive)

I'm thinking of racking it again at the end of September.

Lemonade and Ginger Beer

My sister and her husband enjoyed the home made Ginger Beer and Lemonade.
My sister is now trying to make her own ginger beer and lemonade.
She didn't put them in the refridgerator after 3-5 days like I told her.
A week and a half later the lemonade exploded in the kitchen.
Old fashion soft drinks have a lot of unprocessed sugars, they have to go into the fridge after 3-5 days to slow the process right down. Luckily no one was in the room at the time.

We are going to have a Ginger beer and lemonade taste test at Christmas time.
I'm going to buy a trophy and get the winners name engraved on it.

sounds good, the sort of stuff you would drink when playing dark age games..I drank a bottle of mead once, many many years ago, quite an experience...

Do you remember finishing the Mead?
The recipe I have states the Mead should approach 18%

That's strong stuff.

The aroma is pleasant but at this stage it tastes like rocket fuel.

I will either rack it for a third time in January 2009 or I'll bottle it.

I will not be in a hurry to drink it, I think I will wait until 2010.

I gave some honey to a 'mate' to make some mead years ago, with the understanding I would get some mead in return (I have bee hives on my property to put that in to context).

The bugger took the honey and I never saw him again.

Ahh mead...warmed up with some dark chocolate a a good cheroot...heaven!

Noons winery makes the best mead I've ever had...
